Welcome. Fennel and mango salad

Welcome to my blog.

I will present salad recipes using seasonal and fresh ingredients from Belgium (applicable to France, England, Netherlands, Germany and Italy).

Today’s salad is based on fennel.

 Fennel and mango salad (two servings)
1 fennel (fenouil / venkel)
Juice from 1 lemon (citron / citroen)
1 mango
* translations in (French / Dutch)

Dressing
4 tablespoons extra virgin olive oil (huile d'olive vièrge extra / olijfolie extra vierge)
 salt & pepper

Preparation
Cut fennel into 4 quarters; remove core and slice thinly
Mix with lemon juice
Peel the mango and cut slices from it (avoid the pit)
Mix fennel and mango together
Add olive oil, salt & pepper and mix
Chop fennel leaves, and sprinkle on salad

Fennel is an uncommon vegetable. It can be eaten as a side dish or as a salad. Its fiber quality is excellent, but be prepared that it comes with a strong aroma
